The Google Mirror fun site inverts google results so you can practice mirror reading.  It has been used by the Chinese to get round the Google ban in China.  The site is often down because of bandwidth problems.
 
Google Visualiser
This is a graphic representation of google.  It is amazing and we cannot recommend this site highly enough. Basically it takes the links between sites and represents this as a three dimensional map of the internet.  This really brings the interconnectivity of the internet to life.
Googleart
This site - a product of a bored but brilliant mind - allows you to repeat searches daily and then get them sent back to you by email.
Googlefight
Googlefight  pits one search term against another to see which "wins" by generating the most hits.

Since Google released their APIs to developers on a non-commercial basis several developers have come up with neat utilities that use Google's backend.  Google Hacks is a great introduction to the hacks.
